Caldo de Ósos is an emblematic dish from the town of Taboada, the only place in Galicia renowned for this highly prized delicacy.
The Caldo de Ósos Festival is a highly anticipated annual event for Taboada residents, who come together as a community on Carnival Sunday as a way to fight the cold weather with a hearty plate of caldo de ósos (bone broth), which had traditionally been prepared on the day of the slaughter using the bones of the pig's soá (backbone).
During a weekend combining music with the Festóso festival, and the classic Sunday community lunch, this iconic dish is also served in all the local restaurants.
